A simple base of celery, carrot, and onion cooked in olive oil until soft and almost homogenous. Perfect for quickly building flavors in sautéed dishes.
Ingredients
Makes 2.25 cups
- 1 cup extra-virgin olive oil
- 1 yellow onion, finely chopped
- 1 celery rib, finely chopped
- 1 carrot, finely chopped
- 1 tsp kosher salt
Instructions
- In medium frying pan over medium heat, warm the olive oil until hot but not smoking. Add the onion, celery, and carrot. Cook, stirring occasionally, until the onion and celery are translucent, 5 to 8 minutes. Taste and season with salt.
- Transfer to an airtight container, ensuring the vegetables are completely submerged in the oil.
- Store in the refrigerator for up to 1 week.
